Mimma’s Lingonberry Pie
(glutenfree & vegan)
200 g dairy-free margarine
1 dl sugar
4 dl buckwheat flour
1 tsp baking powder
8 dl lingonberries or blueberries
½ dl potato starch
¾ dl sugar
Whisk sugar and soft margarine until fluffy, then add flour. Press a little over half of the dough into a greased pie tin (Ø 22–24 cm). Mix berries with potato starch and sugar, spread on top of the base. Roll out the remaining dough into a lid to cover the berries. Bake at 180°C for about 25 minutes. Let cool, cut into slices, and enjoy with oat ice cream.
